Lentils and Rice (Lebanese)


  • 1x Smart Meals Feeding Bag
  • 5 ½ cups of water
  • 1x Vegetable stock cube / tsp
  • 2x bay leaves
  • Black pepper to taste
  • 2x tbsp olive oil
  • 5x small- medium onions, sliced.
  • 1x tsp ground cumin
  • Plain yoghurt and fresh herbs for the garnish


  • Begin by cooking the contents of the Smart Meal on the stove in water for 25-30 minutes.
  • Add the veggie stock, black pepper, and bay leaves.
  • While the SM is boiling, heat the oil in a skillet. Once hot, add the sliced onions. Stir, then reduce the heat to medium and cover. Cook for about 10 minutes.
  • Add the cumin and continue to cook without the lid for a further 5-10 minutes. You can increase the heat for a crispier result.
  • Remove the bay leaves from the SM. Add about 2/3 of the caramelised onions to the Smart Meal, reserve the remaining onions for garnish.
  • Serve in bowls, topped with 1 tablespoon of yoghurt, caramelised onions and fresh herbs of choice like parsley or cilantro (coriander).
