Smart Meal Biryani
INGREDIENTS
- 1x Smart Meals Feeding Bag
- 1x Lamb Stock Cube
- 5x Large Potatoes
- 8cm Piece of Ginger, grated
- 2x Garlic Gloves, crushed
- 2x tbsp. Garam Masala
- ½ tsp Chilli Powder
- ½ tsp Ground Turmeric
- 4x Green Chillies, finely chopped.
- 20g coriander leaves, chopped
- 15g mint leaves, chopped
- 4x Onions, thinly sliced
- 125ml Oil
- 125g Butter
- 250ml thick plain yoghurt
- Raita ingredients (optional)
Chopped cucumber and tomato, mixed into yoghurt with black mustard seeds which have been lightly ’popped’ in oil and coriander as a garnish
METHOD
- Par-boil potatoes (peeled and cubed) in water, with lamb stock cube.
- While the potatoes are boiling, mix ginger, garlic, garam masala, chilli powder, turmeric, chilli, coriander and mint in a large bowl.
- Remove the potatoes once done (reserve the stock water) and add to the ginger, garam masala, chilli, etc mix. Ensure the potatoes are well-coated in the marinade. Set aside.
- Par-boil the Smart Meal using the leftover lamb stock from the potatoes. If you need to add extra water, do so.
- While the Smart Meal is boiling, gently fry the onions in a large frying pan, together with the oil and butter, until browned. Be careful not to burn the onions. Reserve the oil and butter.
- Transfer the potatoes coated in the marinade to a large oven-proof casserole (with a tight-fitting lid)
- Add the yoghurt and coat the ingredients evenly.
- Add the onions, the Smart Meal and finally pour the remaining oil and butter over the top.
- Bake in a preheated 200⁰ oven for 25-30 minutes.
- Serving suggestion: Raita, naan bread and chutney.
